Polkadot Mummies: Healthy Quick Fix Recipes for Families

Going in theme with our “Learning” about “Healthy Eating” this week, we decided to each share our favourite “Quick Fix Recipe”. This is a meal we can throw together at the last minute, when you are either running out the door, or it’s the day before shopping day and you have next to nothing left in the cupboard!

Tuna Salad. I used to throw together Tuna salad for my girls as one of those last minute meals, but now Tuna Salad is one of their favourite meals that they request all the time. We always have the ingredients in the fridge and cupboard. Tin of Tuna, Lettuce, Tomatoe, Cucumber, Red Onion, and Ranch Dressing. Often ill add rice to bulk it up a bit. Either way we love it! Its a nice healthy meal thats quick to prepare and requires no cooking. Now thats my kinda meal! 

...And tonight just happens to be one of those nights. We attempted a smiley face on Camryns plate, but usually it just looks like a salady mess of goodness on a plate!

Pick and Mix! This is an old family favourite and it is great for children too. You just get a platter and load it up with WHATEVER you can find in the fridge, or cupboard. Cut up carrot sticks, celery sticks, cucumber, tomato chunks, capsicum sticks, apple slices, apricots etc. If you have any dips, put them in the middle. If you have any cold meats put them on there. Add some cheese sticks and some crackers, bread slices or bread rolls. And everyone can just grab whatever they want, make a salad or a filled roll, load up some cracker creations or just nibble till they’re full! Simple and easy and a great way to use up whatever’s left in the kitchen!

Tuna and cheese on toast! I do this because Brooklyn loves it and I know she’s getting some good protein in her which will also keep her tummy full! I don’t mind it myself :p It’s just toast spread with a bit of butter, tuna from a can spread over (Smoked or Lemon & Pepper are really yummy flavours), and a sprinkle of grated cheese on top. I love putting slices of tomatoes or avocado to spruce it up a bit.

 

I always keep some frozen wedges in the freezer, for those nights when cooking dinner is the last thing I feel like doing! I just cook the wedges, and cut up some cucumber and carrots. The girls love it! And it’s about as easy as you can get I think?
