Rainbow Cupcakes

Polkadot Ashleigh

As the “Rainbow Polkadot” I thought it would be fun to make all my blog posts around the theme of rainbows! (I have found some great ideas from my sister’s Blog, Make It Perfect. She may even be a guest blogger in weeks to come.)

For my first post I thought I would show you how to make these simple “Rainbow Cupcakes” that I tried and worked like a gem.

Rainbow Cupcakes

Vanilla butter cakes
1 cup self-raising flour
90g softened butter
1 teaspoon vanilla essence
½ cup caster sugar
2 eggs
2 tablespoons milk
(makes 8 cupcakes)

Beat all ingredients together and you’re ready to get colouring! Separate mixture evenly into 6 separate bowls. Add food colouring to make all the different colours of the rainbow. In cupcake paper cases, layer the different coloured mixtures, starting with red and ending with purple. Bake for about 20 minutes.

Fluffy Frosting
1 cup caster sugar
1/3 cup water
2 egg whites
(makes 2 ½ cups)

Combine sugar and water in a saucepan and keep stirring over heat until sugar dissolves. Boil, uncovered, without stirring, for about 5 minutes until syrup is thick but not coloured. Let bubbles disappear. Beat egg whites separately until soft peaks form. While beating add sugar mixture and beat on high until mixture is thick.
(or for a simpler option, just use whipped cream! works the same :)

Once the cupcakes have cooled put the fluffly frosting mixture into a piping bag and frost your cupcakes. Add rainbow sprinkles and ENJOY!
